الكينوا نوع من أنواع الحبوب التي تتصف بقيمتها الغذائية العالية ويعود أصل حبوب الكينوا الى قارة أمريكا الجنوبية.

وعرفت في الماضي بذهب شعوب الآنكا اذ اعتقد بارتباط تناول حبوب الكينوا إلى حفاظ هذه الشعوب على صحتهم.

وكان من الصعب أن تجدها في المحلات التجارية إلا انها أصبحت متاحة اليوم على نطاق أوسع للمستهلكين، وكونها تتميز بقيمة غذائية صحية لا بد من التعرف الى أهم فوائدها:

 

- قيمة غذائية: تحتوي الكينوا على نسبة مهمة من البروتين والحديد والمغنيسيوم مما يجعلها ذات قيمة غذائية مرتفعة مقارنة بالقمح والأرز.

- البروتينات الكاملة: تحتوي الكينوا على هذه البروتينات التي تتركب من جميع الأحماض الأمينية الذي تفتقر إليه الحبوب والبقوليات الاخرى.

- ضعف كمية الألياف: التي تحتويها الحبوب الاخرى مما يجعل منها علاجاً للامساك وعاملاً مساعداً لخفض مستوى الكوليسترول والسكر في الدم.

- الليزين: غنية بالحمض الأميني الليزين (Lysine) الهام لنمو الانسجة وتجددها.

- فيتامين ب 2: ان الكينوا غنية بفيتامين ب 2 الذي يؤمن الطاقة للعمليات الحيوية في خلايا الدماغ والعضلات.

- المنغنيز المُضاد للأكسدة: ان غنى الكينوا بالمنغنيز يحد من تلف الميتوكندريا أثناء انتاج الطاقة ويحمي خلايا الدم من تأثير الجذور الحرة.

- غذاء مناسب لمرضى السكري: لكونها غنية بالألياف الغذائية كما أن المؤشر الغلايسيمي المرتبط بتناولها طبيعي مما يشير الى تأثيرها القليل على رفع مستوى السكر في الدم.

- غذاء مناسب للأشخاص الذين يتبعون الحميات الغذائية: لإنقاص الوزن ولكن يجب الاعتدال في تناولها لأنها تحتوي على سعرات حرارية عالية كالأرز فثلث كوب من الكينوا يحتوي على 70 سعرة حرارية.
